If I ask how do you describe ramen, would your answer be ramen is noodle that comes together with the broth soup? If someone ask me this question, my answer would be yes, ramen is always with broth soup.
But actually there is ramen that does not come with the soup. The name of this ramen is Mazesoba.
Mazesoba is a brothless ramen noodles. In Japanese language, Maze has a meaning of “to mix” and Soba means “noodles”. So Mazesoba means “mix the noodles”. It’s to mix hot noodles with a special sauce and oil hidden in the bottom of ramen bowl. You can also add vinegar and chilli oil if you prefer to.
Since Mazesoba doesn’t have soup, the noodles taste will stand out more than ramen with soup. So it’s important to use good quality of noodles and also must use delicious taste of special sauce.

Mazesoba Nagoya style is Kajiken’s signature dish and also the best selling dish. This Mazesoba appearance is very appealing. It also looks healthy because they put massive vegetables on top of the noodles.
After I put special sauce and oil, I mix this noddle for 20 seconds. The taste makes me stunt. It’s so yummy and has a rich flavor.
Mazesoba with all toppings consists of noodle with half boiled Egg, Char Siew, Karaage and Braised Pork Belly.
For me, the Braised Pork Belly is the star in this ramen. Braised Pork Belly is melting in my mouth.
Mazesoba with Karaage consists of noodle with Char Siew and Karaage. Char Siew and Karaage are tender and delicious.
I mix with Kajiken’s special sauce and oil for all of the Mazesoba I eat.
All of the Mazesoba that I try taste perfectly delicious. It’s a pleasure for me to having these Mazesoba.
